- Onions: 1 large onion
- Palm oil: 1/2 cup of palm oil
- Locust beans: 2 tablespoons of iru (locust beans)
- Ground crayfish: 2 tablespoons of ground crayfish
- Meat: 1 pound of assorted meats (beef, goat, or tripe)
- Smoked fish: 2 pieces of smoked fish
- Prawn (Optional)
- Larsor Fish Seasoning/Larsor Beef Seasoning
- Salt: Salt to taste
- Water
Preparation
Follow these steps to create a delicious Eforiro:
- Prepare the Ingredients:
- Wash and chop the spinach or Efo Shoko and set aside.
- Blend the red bell peppers, habanero peppers, and half of the onion to a smooth consistency.
- Dice the remaining half of the onion.
- Clean and cut the assorted meats into bite-sized pieces.
- Debone and flake the smoked fish.
- Cook the Meat:
- Add the assorted meats, diced onions, Larsor Fish Seasoning, and a pinch of salt to a large pot.
- Add water to cover the meat and bring to a boil.
- Reduce the heat and let it simmer for 30 minutes until the meat is tender.
- Once cooked, remove the meat from the pot and set it aside. Reserve the meat stock.
- Make the Pepper Sauce:
- In a clean pot, heat the palm oil over medium heat.
- Add the remaining diced onions and sauté until they are translucent.
- Add the blended pepper mixture to the pot and cook, stirring occasionally, until the oil begins to separate from the sauce. This should take about 15-20 minutes.
- Add the Meat and Fish:
- Return the cooked meat to the pot and stir to combine with the pepper sauce.
- Add the flaked smoked fish, locust beans, and ground crayfish. Stir well. If you are adding prawn, you can add it at this point.
- If the mixture is too thick, add a little bit of the reserved meat stock to achieve the desired consistency.
- Add the Spinach:
- Gradually add the chopped spinach to the pot, stirring continuously to ensure even distribution.
- Cook for an additional 5-7 minutes, or until the spinach is wilted and well incorporated into the stew.
- Taste and adjust the seasoning with salt and the second stock cube as needed.
- Serve:
- Once the Eforiro is ready, remove it from the heat.
- Serve the stew hot with your favourite side dishes such as pounded yam, Amala, fufu, rice, or boiled plantains.
