How to make Ridi Mai Siga snack (Popular Northen Nigeria Snack)

Hi everyone, welcome back to Tiger Kitchen. Today, we will be showing you how to make Ridi Mai Siga which is an also known as Sesame Seed Candy. Nigeria is among the top 5 countries in the world that produces sesame seeds. Sesame Seed Candy is a beloved Nigerian snack that's a must-try for any snack lover. Our easy, step-by-step instructions will help you become a Ridi expert in no time. In this blog, you'll learn the part of Nigeria who rocks this snack, nutritional values, and special ingredients that make this snack irresistible. Sesame seeds, being rich in oil and free from cholesterol, are a healthy vegetable oil choice. In northern Nigeria, these seeds are processed into a variety of popular snacks found with vendors and children. Ridi Mai Siga snacks is often sold in clear packaging at stores and can be enjoyed alone or mixed with peanuts and coconuts. So, put on your apron, get your ingredients ready, and let’s explore the delights of Nigerian snack. Impress your friends and family with your new snack recipe and enjoy the delicious results. Ingredients
2 1/2 cups Sesame seeds
1/2 cup sugar
1/3 cup honey
1 tbsp Tiger Cinnamon powder

Instructions:
Step 1:
Heat a pan over medium heat and then pour in the sesame seeds. Stir frequently until the seeds turn brown and release their aroma. This step is crucial for enhancing the flavour.

Step 2:
In a separate pot, combine honey and sugar. Stir the mixture well to ensure it's fully combined. If you like, add a bit of lemon juice for extra flavour. Add Tiger Cinnamon to the pot. Stir until well mixed. Once combined, turn off the heat.

Step 3:
Pour the toasted sesame seeds into the prepared syrup. Stir thoroughly to ensure all seeds are evenly coated.

Step 4:
Lightly oil a baking sheet to prevent sticking. Transfer the sesame seed mixture onto the prepared sheet. Place another oiled baking sheet on top of the mixture. Press down slightly. Use a rolling pin to roll the mixture until it's less than a quarter of an inch thick.

Step 5: After rolling, remove the top baking sheet. Cut the mixture into squares or your preferred shape. The texture will be firm and crunchy. Allow the squares to cool completely. Keep them uncovered to prevent melting.

The treat is now ready to be enjoyed! If not consuming immediately, leave the squares exposed to keep them from becoming soft.
