This spicy, smooth corn pudding is made from fermented corn or corn starch.

Here is how to make delicious Agidi Jollof at home
Ingredients
- 3 cups dry white corn or yellow corn
- 12 small chewable soft bones
- Tiger Tomato Stew Mix
- Tiger Chilli Pepper
- Vegeta Onions
- Larsor Beef Seasoning
- 1 tsp Tiger Curry Powder
- 1 tsp Tiger Thyme
- 2–3 tsp of vegetable oil
- salt: To taste
- Moi-Moi leaves (Uma leaves/Banana leaves)
Step-by-Step Instructions
Step 1. Prepare the Corn
Soak dry corn for 4–5 hours (or boil briefly), cool, and blend with water into a smooth paste. Strain through a chiffon cloth or cheese net to extract the cornstarch.
Step 2. Prepare the Pepper and Tomato Mix
Heat oil and stir in Tiger Tomato Stew Mix paste. Add Onion, Tiger Curry Powder, Tiger Thyme, Larsor Beef Seasoning, Tiger Chilli pepper, and salt to taste. Simmer for 10–15 minutes, then mix in the soft bones.
Step 3. Prepare the Pap Mixture
While the tomato mixture simmers, mix the cornstarch (or pap) with cold water until lump-free, then stir in boiling water until thick and fully cooked.
Step 4. Combine the Mixture
Lower the heat and set the chewable bones aside for later.
Slowly stir the warm tomato sauce into the pap mixture until thick and smoothly combined.
Step 5. Cook Until Thick
Cook on low heat for 5–10 minutes, stirring continuously until thick and smooth.
Taste and adjust seasoning as needed.
Step 6. Wrap or Serve
Once your Agidi Jollof is ready, take it off the heat, pour into bowls, or wrap in clean leaves. Let it cool to set into its signature firm, smooth texture.
