Akara is one of the most popular breakfast staples in Nigeria; it’s made with a unique combination of Bean paste, Vegeta onion, Tiger Chilli Pepper Powder, Tiger Ginger Powder, Tiger Garlic Powder and salt. Akara and Pap is a typical weekend breakfast in every Nigerian home, it’s usually a Saturday morning or evening; A Nigerian street food made from deep-fried bean batter. Akara is equally known as Bean Fritters, it can be eaten as a snack, appetiser or as a breakfast dish, served with Vegetable Sauce, Pap, Custard or Oatmeal.
Akara is also a superb street food as sellers can be found frying them at different hours of the day. Foodies let’s get the ball rolling at Tiger Kitchen.
Ingredients
3 Cups of Beans.
Tiger Chilli Pepper Powder
Vegeta Onion
Tiger Ginger Powder
Tiger Garlic Powder
One raw hot pepper (Ata rodo) – chopped
Salt
Vegetable Oil for deep frying
Direction
Pick and wash your beans, then soak in lukewarm water for 5 minutes, you can use your hand or electric blender to peel the beans. To achieve this, pour the beans in your electric blender and gently control the pulse function of your blender until the peel or chaff is completely out of the beans. When this is done, go ahead and blend with a mill or the electric blender until its smooth and set aside.
Blend the bell pepper, Vegeta onion and scotch bonnet roughly with as little water as you can…
Now, you need to whisk or use a wooden spoon to stir your Akara batter for 5 minutes; this allows air to make it fluffy and plump.
Next, add the blended pepper, Tiger Ginger Powder, Vegeta Onion, Tiger Garlic Powder, Salt into the batter and mix lightly.
Now, Set a deep Frying pan on medium heat and add enough vegetable oil to deep fry the Akara balls, make sure the heat isn’t too high and not too low either. When it’s hot, begin to scoop the batter into the oil.
Fry till golden brown, this should take 3-4 minutes, remember to turn them over for even frying. Lift the Akara balls out with a frying spoon and drain on kitchen paper towels.
Repeat the process until everything is fried.
You can opt to genuinely enjoy it with vegetable sauce, pap or oatmeal.
